French Prairie Fruit Vinaigrette

Ingredients:

• 1/2 cup white wine vinegar
• 1 cup extra virgin olive oil
• 1 shallot diced fine
• 1 TBS oregano, fresh chopped
• 1/2 TBS pepper, fresh ground
• 1/4 cup French Prairie Marionberry Preserves (Raspberry, Pear, and Black Cherry also work well)

Preparation:

Combine all the ingredients in a bowl. Mix well with a wire whip. Allow flavor to marry for at least 1 hour. Shake well or stir before using.

Excellent tossed with mixed wild greens, or served warm over grilled warm fish
